it's really not that difficult to make cupcakes....

Unless you're at my house...

Today was too much fun. Miss Danni and Valerie came over early in the afternoon for a visit, and we made red velvet cupcakes with cream cheese frosting from scratch. We, meaning I, were a little unprepared for the baking and frosting making. Danni got here before Valerie, so we ran to the store to get what I did not have in my cupboards. The organic store, Henry's, didn't have food coloring. Not really surprising, but I thought they at least made natural food coloring somewhere. (I remember using some at Tia's house, when her and I made cupcakes!!)

We get halfway back to my place, and realize we forgot to get the cream cheese for the frosting!!! But, we go all the way home anyway, hoping Valerie would have both of these things and could bring them. Well, she didn't. So I actually went to two of my neighbors' houses and rang their doorbells in hopes that they had red food coloring. Yes, I really did that. BUT, they both previously told me if I ever needed anything to come over. So I was just doing what they had told me to do. Neither of them answered their doors. Bummer.

Finally Valerie & Alina (her adorable little girl) came over with the cream cheese and food coloring. *insert glorious happy sound here* We finally had everything to add to the cupcakes...and I start to make the frosting, and realize I don't have butter. What the heck! I swear I had a whole box of butter. Searched high and low and couldn't find it, so Danni had to run back to the store. I felt terrible...really! By the time she got back the cupcakes had been baked and cooled.

It took mere seconds for me to whip up the frosting, and I let Valerie and Danni have the honors of frosting the cupcakes while I took photos of Alina getting into trouble.

She shut herself in my bathroom with Smokey, my ten year old cat, who isn't very fond of little kids. Let's just say Smokey was having a panic attack at the back of the toilet. Alina was quite the little fireball. As you can see in the photo below, it is very candid...I normally would not squish my face up like that and give myself a double chin for pictures, but we were in the midst of laughing. Right as the timer on my camera went off, Alina shoved her hand in my cupcake. I wasn't planning on posting that photo, because I just look not so photogenic, but it was too funny to not post.

We would offer you one, but I'm afraid they've all found homes! :)
